Need Another Reason to Avoid Meat?

To the Editor:
Need another reason to avoid meat? A recent scientific review published in the Journal of the National Cancer Institute shows that the risk of developing stomach cancer increases an astonishing 15 percent to 38 percent if consumption of processed meats—like bacon, ham, and sausage—is increased by just 1 ounce daily.
Research has also shown that people who regularly eat red or processed meats are up to 50 percent more likely to develop colon cancer—the second leading cause of cancer-related deaths in the United States—than those who don’t eat meat. These unhealthy foods are also high in cholesterol and fat, two key contributors to heart disease and obesity.
According to the American Cancer Society, an estimated 22,280 Americans will be diagnosed with stomach cancer this year alone—and an estimated 11,430 of those people will die from the disease. By leaving meat off our plates and instead choosing meals rich in colorful fruits and vegetables and low-fat, high-fiber beans and whole grains, we can give ourselves a head start in preventing cancer and other life-threatening illnesses.
