The Cancer Project Offers Nutrition and Cooking Class to Congress:
World-Renowned Chef Sualua Tupolo Will Teach Cancer Prevention Through Healthy Diet

WASHINGTON—Because cancer continues to claim the lives of more than half a million Americans each year, The Cancer Project is hosting a cancer-prevention cooking demonstration for members of Congress and their staff on Thursday, July 20, from 4 to 6 p.m. in room 2105 of the Rayburn Building. The Cancer Project is a national nonprofit dedicated to advancing cancer prevention and survival through education and research.  

World-renowned Chef Sualua Tupolo, whose culinary skill has graced the world’s finest dining rooms for 25 years, will prepare recipes from The Cancer Project’s Survivor’s Handbook for Congresspersons and their staffers to sample. These simple and healthy recipes can be recreated easily at home. Tupolo was the touring chef for three governors of American Samoa. He has prepared meals for members of the U.S. Congress, the King of Tonga, and other dignitaries from around the world.

Jennifer Reilly, R.D., a Cancer Project senior nutritionist who will join Chef Tupolo for the class, will teach members of Congress how certain foods and nutrients can help prevent cancer. “More than a third of all cancer deaths in this country are related to a meat-heavy, high-fat diet,” notes Reilly. The simplest and most effective tool each of us has within our control to prevent cancer or its recurrence is to eat right.

The Rx for better health? A low-fat vegetarian diet, says Reilly. Load up on fruits, vegetables, and whole grains. They’re naturally low in fat, chock-full of fiber, and filled with cancer-fighting antioxidants and phytochemicals. Cut down on fatty foods and added fats and oils, particularly saturated fats, which have been linked to an increased risk of breast, colon, and prostate cancer. Likewise, look for healthy alternatives to dairy products, which have been implicated in the occurrence of breast, prostate, and ovarian cancers.
